Transform plain chicken breasts into an extraordinary weeknight meal with a delectable blend of honey and garlic.
Ingredients:
  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons honey
  • 3 garlic cloves, chopped
Instructions:
  • Gently pat dry chicken with paper towels, then season generously with salt and pepper.
  • In a large skillet, melt butter over medium-high heat. Add oil and place chicken in the skillet. Cook for 6 to 7 minutes on each side until both sides are golden brown and the chicken's juices run clear when the thickest part is cut (reaching at least 165°F). Transfer the chicken to a plate and cover with foil to keep it warm.
  • Combine broth, vinegar, lemon juice, honey, and garlic in the skillet. Simmer for 5 minutes or until the sauce thickens, while using a spatula to scrape up the flavorful browned bits from the bottom of the skillet.
  • Slice the chicken diagonally and generously pour the sauce over it for a delicious presentation.
