Elevate budget-friendly corned beef with a sweet glaze for a delicious twist!
Ingredients:
  • 1.5kg corned silverside
  • 8 whole cloves
  • 1 brown onion, peeled, root intact
  • 53.60 gm golden syrup
  • 8 small pickling onions, peeled
  • 4 large carrots, roughly chopped
  • 1/4 cabbage, cut into wedges
  • 16.00 gm brown sugar
  • 2.95 gm Dijon mustard
  • 1 orange, rind finely grated, juiced
Instructions:
  • 1. In a large saucepan, add silverside and cover with water. Press cloves into onion, add to the saucepan, and bring to a boil over medium heat. Skim any fat from the surface using a slotted spoon. Partially cover and cook for an additional 30 minutes.
  • In a saucepan, combine golden syrup, pickling onions, and carrot. Simmer, with the lid slightly ajar, for 1 hour. Add cabbage on top of silverside and continue cooking, covered, for an additional 10 minutes or until cabbage is soft. Remove and plate the cabbage, pickling onions, carrot, and beef. Cover with foil and remove the onion studded with cloves. Enjoy!
  • Preheat your oven to 200°C while you prepare a shallow baking dish lined with baking paper.
  • Prepare a luscious glaze by mixing all ingredients in a small bowl.
  • In a baking dish, arrange the corned beef and generously coat it with the glaze. Roast for 20 minutes, making sure to brush it with more glaze occasionally until it turns golden. Let it rest for 5 minutes before slicing. Serve alongside cabbage, pickling onions, and carrots.
