Tender oven-baked corned beef glazed with sweet apricot, brown sugar, and soy sauce.
Ingredients:
  • nonstick cooking spray
  • 4.5 pounds corned beef, rinsed
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
Instructions:
  • Preheat the oven to an inviting 350 degrees F (175 degrees C) while giving your baking dish a quick nonstick spray.
  • Place the corned beef in a baking dish and add water. Cover tightly with aluminum foil.
  • After 2 hours in the preheated oven, remove and drain any excess liquid.
  • Mix together the apricot preserves, brown sugar, and soy sauce until well combined. Spread the mixture evenly over the corned beef.
  • Continue baking in the oven without a cover until the meat is tender, for an additional 25 to 30 minutes, remembering to baste the meat occasionally with the pan drippings.
  • Slice the succulent corned beef against the grain before presenting it beautifully on a plate.
