Lemon Supreme Pound Cake: A zesty delight made with lemon cake mix, gelatin, extract, and fresh juice for a burst of citrus flavor.
Ingredients:
  • 1 (15.25 ounce) package lemon cake mix
  • 1 (3 ounce) package lemon flavored Jell-O® mix
  • 4 large eggs
  • 0.75 cup apricot nectar
  • 0.5 cup vegetable oil
  • 1 teaspoon lemon extract
  • 1.5 cups confectioners' sugar
  • 0.25 cup lemon juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour a 10-inch tube pan.
  • Make the cake batter by mixing cake mix and gelatin in a bowl. Add eggs, apricot nectar, oil, and lemon extract. Mix well, then beat for 3 minutes on high speed. Pour the batter into the tube pan.
  • Bake until a toothpick comes out clean, approximately 60 minutes in the preheated oven.
  • Prepare the glaze while the cake bakes by blending confectioners' sugar and lemon juice in a small bowl until silky.
  • Once the cake is done baking, leave it in the pan and generously drizzle the glaze over it while it's still warm. Tilt the pan slightly to let any extra glaze drip down the sides. Let the cake sit in the pan for 10 minutes to cool before transferring it onto a wire rack to cool completely.
