Glazed Lemon Wedges

These citrus-flavored treats are elegantly shaped for a stunning presentation.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Butter Recipe Yellow Cake Mix
  • 1/3 cup butter, softened
  • 2 tablespoons grated lemon peel
  • 1 egg
  • 1 cup powdered sugar
  • 1 teaspoon grated lemon peel
  • 3 tablespoons lemon juice
  • Grated lemon peel, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans). Grease two 8-inch round cake pans with baking spray with flour or line with foil.
  • In a spacious bowl, mix together cake mix, butter, 2 tablespoons of lemon peel, and the egg using an electric mixer on low speed until a crumbly texture forms. Increase speed to medium and continue mixing until dough comes together. Divide the dough in half and press half into each pan.
  • Bake for 17 to 23 minutes, or until edges are a light golden brown, then cool for 10 minutes.
  • Combine glaze ingredients in a small bowl until perfectly smooth. Pour the glaze over the warm shortbread, spreading it to the edges. Let it cool for about 50 minutes, then top with lemon peel before slicing each shortbread into 12 wedges. Store loosely covered and enjoy!
