Luscious lemon loaf for cozy mornings.
Ingredients:
  • 0.25 cup butter, softened
  • 0.75 cup white sugar
  • 2 teaspoons grated lemon peel
  • 2.5 teaspoons baking powder
  • 0.75 cup milk
  • 0.5 cup chopped walnuts
  • 2 teaspoons lemon juice
Instructions:
  • Preheat your oven to a toasty 350°F (175°C) and grease a 9x5 inch loaf pan ever so lightly.
  • In a spacious bowl, mix the butter and 3/4 cup sugar until fluffy. Add the eggs one at a time, beating well after each addition, then blend in the lemon peel. In another bowl, sift together the flour, salt, and baking powder.
  • Combine the flour mixture with the egg mixture and milk alternately until just combined. Gently fold in the nuts until evenly distributed. Transfer the batter to the prepared loaf pan.
  • Bake in a preheated oven until a toothpick inserted in the center of the loaf comes out clean, for 50-55 minutes.
  • Combine 2 tablespoons of sugar with lemon juice in a small bowl. Once the loaf has cooled for 10 minutes, generously spoon the glaze over the top of the loaf.
