Glazed Lemon Zucchini Bread

Moist lemon zucchini bread with sweet & tangy glaze. Easy to make and irresistible.
Ingredients:
  • 2 cups cake flour
  • 0.5 cup canola oil
  • 0.5 cup buttermilk
  • 2 tablespoons lemon juice
  • 1 lemon, zested
  • 1 cup grated zucchini
  • 1 cup powdered sugar
  • 1 tablespoon milk
Instructions:
  • Heat the oven to 350 degrees F (175 degrees C) and grease a 9x5-inch loaf pan.
  • Combine the flour, baking powder, and salt in a medium bowl, then set aside.
  • In a large bowl, whisk together eggs until smooth. Mix in sugar and oil until fully combined. Add buttermilk, lemon juice, and lemon zest and mix until incorporated. Gently fold in zucchini until evenly distributed. Stir in the flour mixture until fully combined. Transfer batter to the prepared pan.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, approximately 40-45 minutes in the preheated oven.
  • Combine powdered sugar, tangy lemon juice, and creamy milk in a bowl to create a delicious glaze. Spoon the glaze over the warm loaf and allow it to set up before cutting and serving.
