Ingredients:
  • 1/2 cup tapioca flour
  • 1/2 cup white rice flour
  • 1/2 cup potato starch flour
  • 1/4 cup garbanzo and fava flour
  • 1/4 cup sweet white sorghum flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon guar gum
  • 1 teaspoon gluten free baking powder
  • 1 teaspoon salt
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup ghee (measured melted)
  • 1/4 cup almond milk, soymilk or regular milk
  • 1 teaspoon pure vanilla
Instructions:
  • Preheat your oven to 350°F. Give your 9x5-inch loaf pan a generous coating of cooking spray (without flour) on the bottom and sides.
  • Combine all flours, xanthan gum, guar gum, baking powder, baking soda, cinnamon, and salt in a small bowl. In a separate medium bowl, whisk the remaining ingredients until well blended. Stir in the flour mixture until fully combined. Transfer the batter into the pan.
  • Bake uncovered for 30 minutes, then cover with foil and bake for an additional 25-30 minutes until a toothpick inserted in the center almost comes out clean. Allow to cool for 5 minutes before transferring from the pan to a cooling rack. Once completely cool (about 1 hour), wrap tightly and store in the refrigerator.
