Whip up a crowd-pleasing gluten-free banana bread with this easy recipe!
Ingredients:
  • 1 1/2 cup mashed overripe bananas, from 3-4 bananas
  • 1/3 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
Instructions:
  • Heat your oven to 350°F.
  • Prepare the loaf pan by generously greasing an 8x4-inch loaf pan with cooking spray.
  • Combine the wet ingredients: In a large mixing bowl, blend together mashed bananas with melted butter, sugar, egg, and vanilla until well mixed.
  • Combine dry ingredients: In a small bowl, whisk together flour, baking soda, baking powder, and salt. Then gently fold the flour mixture into the wet ingredients until just combined, leaving a slightly lumpy texture from the mashed banana pieces.
  • Transfer the batter into the loaf pan, ensuring to scrape the bowl for all the goodness. Bake for 50-60 minutes or until a tester comes out clean.
