Create soft and chewy gluten-free biscuits with just 6 simple ingredients.
Ingredients:
  • 2 x 430g packets gluten-free vanilla cake mix (icing sachets discarded)
  • 100g butter, melted
  • 169.95 gm milk
  • Pink food colouring
  • Yellow food colouring
  • 155g jar gluten-free 100’s and 1000’s
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare 2 large baking trays by lining them with baking paper.
  • In a bowl, create a well in the cake mix, and then add butter and milk. Stir thoroughly to combine. Divide the mixture equally among three bowls. Color one batch pale pink, another pale yellow, and leave the last plain.
  • In a bowl, pour hundreds and thousands. Shape 1 level tablespoon of pink mixture into a soft ball. Coat the ball with hundreds and thousands, then flatten it into a disc. Place on a tray and repeat with the remaining pink mixture, spacing discs 6cm apart. Repeat process with yellow mixture on the other tray.
  • Bake for 10-12 minutes, switching trays halfway through, until cookies spread but tops are soft. Let cool on trays for 5 minutes, then transfer to a wire rack lined with baking paper (cookies will be very soft but will firm up as they cool). Repeat with remaining dough. Cool completely before serving.
