Gluten-free chicken and dumplings made easy with Bisquick™ Gluten Free mix.
Ingredients:
  • 2 1/2 cups Progresso™ chicken broth
  • 1 1/2 cups cut-up cooked chicken
  • 1 cup frozen mixed vegetables
  • 1 teaspoon gluten-free seasoned salt
  • 1/4 teaspoon pepper
  • 1 cup milk
  • 3 tablespoons cornstarch
  • 3/4 cup Bisquick™ Gluten Free pancake & baking mix
  • 1/3 cup milk
  • 2 tablespoons butter, melted
  • 1 egg
Instructions:
  • Take a 3-quart saucepan and bring the chicken broth, chicken, vegetables, salt, and pepper to a boil. In a small bowl, whisk together 1 cup of milk and cornstarch until smooth, then add to the chicken mixture. Heat until just boiling.
  • Combine dumpling ingredients in a small bowl until well mixed. Use a rounded spoon to gently drop 8 spoonfuls of dough onto the boiling chicken mixture.
  • First, simmer the dish gently without a lid for 10 minutes. Then, cover it and continue cooking for an additional 15 minutes.
