Elevate your chocolate chip cookies with the delicious nutty flavor of hemp seeds in this foolproof gluten-free recipe.
Ingredients:
  • 1.25 cups sorghum flour
  • 1 cup white rice flour
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 1 cup unsalted butter, softened
  • 0.75 cup white sugar
  • 0.75 cup brown sugar
  • 2 cups milk chocolate chips
  • 1 cup hemp seed hearts
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare the baking sheets by lining them with parchment paper.
  • In a large bowl, mix sorghum flour, rice flour, baking soda, xanthan gum, and salt until fully combined.
  • In a large bowl, use an electric mixer to beat butter, white sugar, and brown sugar until light and fluffy, about 2 minutes. Mix in eggs one at a time, then add vanilla extract. Combine butter mixture with flour mixture and beat until mixed, about 2 minutes. Fold in chocolate chips and hemp seeds to the cookie dough.
  • Chill cookie dough in the refrigerator for a minimum of 20 minutes to allow it to firm up.
  • Spoon generous dollops of dough onto baking sheets, making sure to leave 2 inches of space between each. Use the back of the spoon to gently flatten each dough mound.
  • Bake until cookie edges turn lightly golden, about 8 to 11 minutes. Let cool for 10 minutes before removing from parchment paper. Cool baking sheet before using again.
