Gluten-Free Chocolate Chip Snickerdoodles

Gluten-free chocolate chip cookies with cinnamon and buttery taste, made easy with Bisquick® Gluten Free mix.
Ingredients:
  • 2 eggs
  • 1 1/4 cups sugar
  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 2 cups Bisquick™ Gluten Free mix
  • 1/2 cup miniature semisweet chocolate chips
  • 1 tablespoon unsweetened baking cocoa
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat oven to 375°F. Combine eggs, 1 cup of sugar, butter, and shortening in a large bowl. Mix in Bisquick mix and chocolate chips until dough is formed.
  • Combine the remaining 1/4 cup of sugar with cocoa and cinnamon in a small bowl. Form the dough into 1 1/4-inch balls. If the dough is too soft, chill it in the freezer for 10 to 15 minutes. Coat the balls with the sugar mixture and arrange them 2 inches apart on ungreased cookie sheets.
  • Bake for 9 to 11 minutes until perfectly set. Then, transfer cookies from sheets to cooling racks right away. Keep the delicious cookies tightly covered once cooled.
