Gluten-free chocolate hazelnut friands

Gluten-free friands, a quick and delicious treat for everyone in under 25 minutes.
Ingredients:
  • 5 egg whites
  • 125.00 gm hazelnut meal (ground hazelnuts)
  • 187.50 gm gluten-free pure icing sugar, sifted
  • 165.00 ml gluten-free plain flour
  • 150g butter, melted, cooled
  • 125.00 ml white choc chips
  • 125.00 ml milk choc chips
  • gluten-free pure icing sugar, for dusting
Instructions:
  • Preheat your oven to 190°C/170°C fanforced and line a 12-hole muffin pan with paper cases that hold 1/3 cup each.
  • In a large bowl, whip egg whites until frothy. Mix in hazelnut meal, icing sugar, flour, vanilla, and butter until just combined. Gently fold in choc chips. Fill prepared pan with batter.
  • Bake for 20 minutes or until a skewer inserted in the center comes out clean. Allow to rest in the pan for 2 minutes, then transfer to a wire rack to cool. Dust with icing sugar before serving.
