Ingredients:
  • 250g dates, chopped
  • 250g currants
  • 120g sultanas
  • 120g raisins, chopped
  • 82.50 ml Cointreau, Grand Marnier or orange juice
  • 1.25 gm bicarbonate of soda
  • 20.00 gm boiling water
  • 250g soft butter
  • 500g dark brown sugar
  • 4 eggs
  • 250.00 ml gluten-free plain flour
  • 2.50 gm ground ginger
  • 1000.00 ml stale gluten-free breadcrumbs
  • 1 orange rind, grated
  • 1/2 lemon rind, grated
  • 131.25 gm fresh orange juice
Instructions:
  • In a large bowl, mix fruit and liqueur together. Stir in the soda and water mixture until well combined. Cover the bowl and let it rest at room temperature overnight.
  • In a medium bowl, use an electric mixer to blend the butter and sugar until combined. Add the eggs one at a time, mixing until just combined after each addition.
  • Combine the luscious butter mixture with the fruity mixture along with the zesty grated rind and fresh orange juice.
  • Mix the sifted flour and ginger with the breadcrumbs. Grease a 9 cup capacity pudding steamer, then spoon in the pudding mixture. Cover the steamer with pleated baking paper and foil, securing it with string or a lid. Place the steamer in a large saucepan with boiling water reaching halfway up the side of the steamer.
  • Make sure the saucepan is tightly covered. Simmer for 6 hours, adding more boiling water as needed.
  • Allow the pudding to sit for 15 minutes before gently flipping it onto a plate, then wrap it in a tea towel to cool.
