Festive Christmas snack mix: Rice Chex™ cereal coated in sweet vanilla, powdered sugar, and holiday sprinkles for a delightful treat.
Ingredients:
  • 6 cups Rice Chex™ cereal
  • 1/4 cup butter
  • 1/3 cup granulated sugar
  • 2 teaspoons pure vanilla
  • 1/4 cup powdered sugar
  • 1 1/2 cups white vanilla baking chips
  • 4 teaspoons gluten-free holiday-colored nonpareils or sprinkles
Instructions:
  • Cover a large rimmed cookie sheet with waxed paper. Place cereal in a spacious microwave-safe bowl.
  • In a small microwave-safe bowl, microwave the butter uncovered on High for 20-30 seconds until melted. Add the granulated sugar and microwave uncovered on High for 30-40 seconds until the sugar is dissolved. Stir in the vanilla and pour the mixture over the cereal, stirring until evenly coated.
  • Microwave on High, stirring every minute, until thoroughly glazed (3 to 4 minutes). Mix powdered sugar into bowl with cereal until well-coated. Spread mixture onto a cookie sheet.
  • Microwave the chips in a small bowl on Medium (50%) power for 1 to 2 minutes, stirring halfway through, until melted and smooth. Transfer the melted chips to a small resealable plastic bag, cut off a corner, then drizzle over the snack mix and top with sprinkles.
  • Chill for 20 to 30 minutes until the drizzle firms up. Gently break into small pieces and place in a spacious serving bowl.
