Indulge in buttery, tender gluten-free holiday cookies – a delicious twist on classic sugar cookies. Elevate your Christmas with a sweet glaze and extra sprinkle of sugar for a festive touch. Perfect for gluten-free loved ones!
Ingredients:
  • 1 cup granulated sugar
  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 2 teaspoons pure vanilla extract
  • 1 egg
  • 2 1/2 cups from 1 box (16 oz) Betty Crocker™ Gluten Free All Purpose Rice Flour Blend
  • 1/2 teaspoon gluten-free baking powder
  • 1/4 teaspoon salt
  • 1 cup gluten-free powdered sugar
  • 2 tablespoons milk
Instructions:
  • In a large bowl, use an electric mixer to beat together granulated sugar, shortening, and softened butter until creamy. Add vanilla and egg, then mix on low speed. Stir in flour blend, baking powder, and salt until well combined. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for about 1 hour until firm.
  • Preheat the oven to 375°F. Roll out each half of the dough on a floured work surface to 1/4-inch thickness. Use a 2 1/2-inch cookie cutter to cut out shapes and place them 1 inch apart on ungreased cookie sheets.
  • Bake for 8 to 12 minutes until edges are lightly browned. Allow the cookies to rest for 2 minutes on the baking sheet before transferring them to a cooling rack. Let them cool completely for about 15 minutes. Combine the Glaze ingredients and drizzle over the cookies. Sprinkle with extra granulated sugar, if desired, and let sit for 30 minutes to allow the glaze to set. Store the cookies in an airtight container at room temperature with waxed paper between layers.
