Create warm, homemade yeast rolls that bring smiles and seconds.
Ingredients:
  • 1/2 cup warm water (105°F to 115°F)
  • 1 teaspoon unflavored gelatin
  • 1 package fast-acting dry yeast (2 1/4 teaspoons)
  • 3/4 cup cornstarch
  • 3/4 cup potato starch flour
  • 1/2 cup sorghum flour
  • 1/2 cup brown rice flour
  • 1/2 cup white rice flour
  • 1/3 cup tapioca flour
  • 1/3 cup garbanzo and fava flour
  • 2 eggs
  • 1/2 cup almond milk, soymilk or regular milk
  • 1/4 cup honey
  • 3 tablespoons sunflower oil or ghee (measured melted)
  • 1 teaspoon cider vinegar
  • 2 teaspoons xanthan gum
  • 1 1/2 teaspoons salt
Instructions:
  • Grease 24 regular-size muffin cups with non-stick cooking spray (without flour). Combine water, gelatin, and yeast in a small bowl; let it sit. In a medium bowl, blend cornstarch with all-purpose and whole wheat flours; set aside.
  • Combine eggs, milk, honey, oil, vinegar, xanthan gum, and salt in a food processor. Blend for about 30 seconds until smooth. Then add the flour mixture and yeast mixture, blend again for about 30 seconds until well combined.
  • Grease 2 teaspoons with cooking spray (without flour). Place 3 dough balls in each muffin cup, greasing spoons as needed. Grease a sheet of plastic wrap with cooking spray (without flour) and cover dough in pans. Allow to rise in a warm place (80°F to 85°F) for 1 to 1.5 hours until doubled in size.
  • Preheat the oven to 375°F. Unwrap the rolls and bake for 14 to 16 minutes until they are a light golden brown. Remove the rolls from the pans onto cooling racks immediately, and serve warm.
