Satisfy gluten-free guests with flavorful garlic dill rolls at your dinner party.
Ingredients:
  • 1.5 cups warm water (110 degrees F/45 degrees C)
  • 1 tablespoon white sugar
  • 1 (.25 ounce) package rapid rise yeast
  • 3 large eggs
  • 1.5 teaspoons canola oil
  • 1 teaspoon apple cider vinegar
  • 2.5 cups gluten-free all purpose baking flour (such as Bob's Red Mill®)
  • 2 teaspoons xanthan gum
  • 2 teaspoons dried dill weed
  • 1.5 teaspoons minced garlic
Instructions:
  • Combine warm water and sugar in a bowl. Sprinkle yeast over the mixture and let it foam for about 5 minutes.
  • Combine eggs, canola oil, and vinegar in a bowl and whisk until frothy.
  • In a bowl, mix flour, xanthan gum, and salt together until evenly combined. Use an electric mixer to blend in the yeast mixture until well incorporated. Add the egg mixture to the flour mixture and combine, then fold in dill and garlic. Beat the dough on high speed for at least 4 minutes until sticky and well-formed. Cover the bowl with plastic wrap and let the dough rise in a warm area for about 30 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 10x13-inch baking dish.
  • Shape the dough into 12 large rolls and place them 3/4 inch apart in the baking dish.
  • Bake the rolls in the preheated oven until lightly golden, for 35 to 45 minutes.
