Whip up gluten-free dinner rolls with almond and tapioca flour in 30 minutes!
Ingredients:
  • 2 cups (240g) tapioca flour
  • 2 cups (240g) almond flour
  • 4 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 4 large eggs
  • 1/4 cup water
  • 3 tablespoons olive oil, plus more for your hands
  • Salted butter (dairy or plant-based), for serving
Instructions:
  • Preheat the oven to 400°F and prepare a baking sheet with a silicone liner or parchment paper.
  • Mix the dry ingredients together: In a medium bowl, combine tapioca flour, almond flour, baking powder, salt, Italian seasoning, and garlic powder. Stir with a wooden spoon.
  • Combine wet ingredients: Create a space in the middle of the dry ingredients and pour in the eggs, water, and oil. Blend the wet ingredients thoroughly before incorporating them into the dry mixture until a sticky dough forms.
  • Shape the rolls: Using lightly oiled hands, form about 1/4 cup of dough into a ball and place it on the baking sheet. Repeat with the remaining dough, oiling your hands as necessary to prevent sticking. You should end up with a total of 12 rolls, spaced at least an inch apart on the baking sheet.
  • Bake the rolls at 350ºF for 15 minutes until they are puffy, lightly browned, and reach an internal temperature of 200ºF.
  • Cool and serve: Transfer the rolls to a cooling rack and let them cool for 10 minutes. Serve warm with butter alongside for a delicious treat. For leftovers, freeze or store at room temperature for 2-3 days. Reheat by thawing at room temperature and warming in a 350ºF oven for 10 minutes. Enjoy!
