Fluffy gluten-free donuts made with coconut and almond flour for a heavenly treat.
Ingredients:
  • 1 quart olive oil for frying, or as needed
  • 5 tablespoons coconut milk
  • 0.25 cup gluten-free all-purpose baking flour
  • 2 tablespoons almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons honey
  • 0.25 teaspoon guar gum
  • 0.5 cup confectioners' sugar
Instructions:
  • In a deep fryer or large saucepan, warm the oil to 300 degrees F (150 degrees C).
  • Combine coconut milk, all-purpose flour, egg, almond flour, coconut flour, honey, and guar gum in a bowl. Use a hand blender to beat the mixture until it reaches a thick pancake batter consistency.
  • Spoon batter into hot oil in batches and fry until donuts are dark brown, for 3 to 5 minutes. Using a slotted spoon, transfer the donuts to a bowl. Coat with confectioners' sugar by rolling the donuts in the sugar.
