Gluten-free double chocolate peppermint cookies made with chewy rice flour dough - a simple, crowd-pleasing sweet treat!
Ingredients:
  • 1 cup butter, softened
  • 2 teaspoons peppermint extract
  • 2 cups rice flour
  • 0.66666668653488 cup cocoa powder
  • 2 cups chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give 2 baking sheets a gentle grease.
  • Combine sugar, butter, eggs, and peppermint extract in a bowl, stirring until fully mixed.
  • In a separate bowl, mix together rice flour, cocoa powder, baking soda, and salt. Add this mixture gradually to the butter mixture, stirring until fully combined. Gently fold in chocolate chips.
  • Spoon dough onto baking sheets, spacing each 2 inches apart.
  • Bake in the oven until edges start to darken and the center is set, about 8 to 10 minutes.
