Indulge in irresistible gluten-free double chocolate chewy cookies.
Ingredients:
  • 125g gluten-free dark chocolate, chopped
  • 100g butter, chopped
  • 500.00 ml gluten-free flour
  • 135.00 gm Brand Brown Sugar
  • 141.90 gm Brand Caster Sugar
  • 32.50 gm Baking Cocoa
  • 2.50 gm bi-carb soda
  • 2 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 230g pkt milk chocolate baking chips
Instructions:
  • Preheat your oven to 160C (140C fan) and prepare 3 large baking trays by lining them with baking paper.
  • Combine the chocolate and butter in a small saucepan and gently stir over low heat until velvety smooth. Allow it to cool slightly before using.
  • In a large bowl, combine flour, sugar, cocoa powder, and bicarbonate of soda. Whisk until well mixed. Add the egg and vanilla, followed by the chocolate mixture, stirring until combined. Fold in the chocolate chips. Shape 1 tablespoon portions of the cookie dough into balls, placing them 5cm apart on prepared trays. Gently press down to flatten to 4cm wide. Bake for 18 minutes, then cool on the trays.
