Indulge in chewy gluten-free oatmeal-chocolate chip cookies without any milk products - perfect for a GF/CF diet.
Ingredients:
  • 0.5 cup gluten-free flour blend (such as Namaste®)
  • 2 tablespoons gluten-free flour blend (such as Namaste®)
  • 0.25 teaspoon baking soda
  • 0.5 cup vegan butter (such as Earth Balance®)
  • 0.5 cup packed light brown sugar
  • 0.25 cup white sugar
  • 1 large egg
  • 1.5 cups gluten-free quick-cooking oats
  • 0.5 cup vegan chocolate chips (such as Enjoy Life®)
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix 1/2 cup plus 2 tablespoons of flour with salt and baking soda.
  • In a bowl, whip together vegan butter, brown sugar, and white sugar until creamy. Add the egg and mix well, then stir in the vanilla. Gently fold in the flour mixture until just combined. Add oats and chocolate chips, then scoop heaping spoonfuls onto an ungreased baking sheet.
  • Bake in the oven until edges are golden, approximately 12 minutes. Allow to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool for an additional 8 to 10 minutes.
