Gluten-Free Mint Chocolate Chip Meringues

"Decadent chocolate chip meringue cookies with a refreshing hint of mint, ideal for a delightful dessert."
Ingredients:
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/3 cup sugar
  • 1/4 teaspoon spearmint extract
  • 4 drops green food color
  • 1 1/2 cups miniature semisweet chocolate chips
  • 2 teaspoons shortening
Instructions:
  • Preheat the oven to 200°F and line 2 large cookie sheets with parchment paper for easy cleanup.
  • In a medium bowl, use an electric mixer on low speed to beat egg whites and cream of tartar until foamy. Slowly add sugar, increase speed to high, and beat until stiff peaks form. Mix in spearmint extract and food coloring. Gently fold in 1/2 cup of chocolate chips. Drop tablespoonfuls of meringue onto cookie sheets, spacing about 1 inch apart. Bake for 2 hours. Turn off the oven and leave the meringues inside with the door closed overnight.
  • In a small microwavable bowl, heat shortening and 1 cup of chocolate chips in the microwave on high for 1 to 2 minutes, stirring every 30 seconds, until smooth. Dip the bottom of each cookie into the melted chocolate. Place cookies back on the sheets and let them sit for 2 hours until the chocolate sets. Store the cookies at room temperature once the chocolate has hardened.
