Gluten-free parsnip, pork & apple stuffing

Delicious gluten-free stuffing made with sausages and bread, easily customizable with regular ingredients.
Ingredients:
  • a few sprigs of fresh sage
  • 4 parsnips
  • 2 eating apples
  • 1 splash of cider
  • 8 gluten-free sausages
  • 200 g gluten-free bread
  • 1 large free-range egg
  • 1 lemon
Instructions:
  • Preheat the oven to 190°C/375°F/gas 5 and grease a 20cm baking dish. Chop the onions, sage leaves, parsnips, and apples into 1cm pieces. Sauté onions in oil for 5 to 10 minutes until soft. Add shredded sage, parsnips, cider, salt, and pepper. Cover and cook for 10 minutes. Add apples, cook for a few more minutes, then transfer to a bowl to cool. Mix in sausage meat, breadcrumbs, egg, and lemon zest. Press into baking dish, cover with foil, and bake for 45 minutes. Remove foil and bake for another 15 minutes before serving.
