Indulge in tender slow-roasted orange ginger pork shoulder for a cozy meal.
Ingredients:
  • 1.5kg boneless pork shoulder
  • 2cm piece fresh ginger, peeled, grated
  • 65.63 gm orange juice
  • 45.00 gm brown sugar
  • 62.50 ml Chinese rice wine (see note)
  • 20.00 ml kecap manis
  • 1 bunch baby carrots, trimmed, peeled
  • 4 small parsnips, peeled, quartered
  • 1 orange, cut into wedges
Instructions:
  • In a large glass or ceramic dish, mix together pork, ginger, orange juice, sugar, wine and kecap manis. Cover and chill in the refrigerator for at least 1 hour, or overnight for best results.
  • Preheat the oven to 160°C/140°C fan-forced. Place the pork and marinade in a large ovenproof dish. Bake for 1 hour and 30 minutes, basting the pork with the marinade. If the pork is browning too quickly, cover with foil during cooking.
  • Toss in carrot, parsnip, and orange wedges and let them mingle in the flavors. Cook for 40 minutes or until the pork is beautifully browned, the veggies are tender, and the dish is ready to impress. Enjoy your meal!
