Versatile gluten-free flatbread/pizza crust that is easy and kid-approved.
Ingredients:
  • 1 cup very warm water
  • 0.5 teaspoon white sugar
  • 2 teaspoons yeast
  • 2 cups gluten-free flour blend
  • 0.5 cup rice flour
  • 1 tablespoon Italian seasoning
  • 1 teaspoon xanthan gum
  • 1 teaspoon unflavored gelatin powder
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons olive oil
Instructions:
  • Whisk water and sugar in a bowl until combined. Stir in yeast. Allow the mixture to sit until the yeast softens and a creamy foam forms, around 10 minutes.
  • Preheat the oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine gluten-free flour, rice flour, Italian seasoning, xanthan gum, gelatin, and salt. Whisk together vinegar and olive oil with the yeast mixture, then pour over the flour mixture. Mix on high speed until a wet, sticky dough forms, approximately 6 minutes.
  • Place the dough onto the baking sheet lined with parchment paper. Cover with another sheet of parchment paper and spread the dough to fill the sheet evenly. Allow the dough to rest for about 10 minutes.
  • Bake in the preheated oven for 5-10 minutes until the dough puffs up. Remove parchment paper, then bake for an additional 20 minutes until golden brown with fully cooked edges.
