Elegant roast pork tenderloin with rosemary, sweet potatoes and pears.
Ingredients:
  • 1 pork tenderloin (1 to 1 1/4 lb)
  • 2 teaspoons chopped fresh rosemary leaves
  • 1/2 teaspoon dried sage leaves, crushed
  • 1/4 teaspoon coarse ground black pepper
  • 1 large dark-orange sweet potato (about 1 lb), peeled, cut into 1 1/2-inch pieces
  • 2 firm ripe small pears, unpeeled, each cut into 6 wedges
  • 1 medium sweet onion (halved crosswise), cut into thin wedges
  • Fresh sage leaves, if desired
Instructions:
  • Preheat oven to 450°F. Grease a 15x10x1-inch pan with cooking spray. Arrange pork tenderloin in the pan. In a small bowl, combine rosemary, salt, sage, and pepper. Massage half of the seasoning mixture onto the pork.
  • Combine sweet potato, pears, and onion in a medium bowl. Drizzle with oil and mix until evenly coated. Sprinkle with the remaining seasoning mixture and toss again. Arrange the vegetables around the pork.
  • Bake for 25-30 minutes, gently stirring veggies and pears occasionally. The pork should have a slight blush in the center and reach 145°F when tested with a meat thermometer. Vegetables should be tender. Cover with foil, let sit for 3 minutes, slice pork into 1/2-inch pieces, and serve with veggies. Garnish with fresh sage leaves.
