Gluten-free sourdough chestnut waffle: Smoky, buttery, crispy perfection.
Ingredients:
  • 0.5 cup milk, at room temperature
  • 2 medium eggs, at room temperature
  • 0.25 cup unsalted butter, at room temperature
  • 2 tablespoons unsalted butter, at room temperature
  • 1 tablespoon maple syrup
  • 0.5 cup fine chestnut flour, unsifted
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon baking soda
  • 1 cup gluten-free sourdough starter
  • 2 tablespoons milk, at room temperature, or as needed
  • 1 teaspoon baking powder
Instructions:
  • Heat up your waffle iron.
  • In a bowl, combine 1/2 cup milk, eggs, 1/4 cup plus 2 tablespoons butter, and maple syrup. Sprinkle chestnut flour, cinnamon, and baking soda over the mixture, whisk well. Gently fold in sourdough starter until just combined. If needed, slowly add extra milk to adjust the batter's consistency.
  • Cook the waffle batter in the preheated waffle iron until golden brown and steam subsides, approximately 5 minutes for each waffle.
