Gluten-Free Ultimate Chicken Fingers

Indulge in crispy gluten-free chicken fingers made with Bisquick™ Gluten Free mix.
Ingredients:
  • 3/4 cup Bisquick™ Gluten Free pancake & baking mix
  • 1/2 cup grated gluten-free Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon salt or garlic salt
  • 3 boneless skinless chicken breasts (1 lb), cut crosswise into 1/2-inch strips
  • 2 eggs, slightly beaten
  • 3 tablespoons butter or margarine, melted
Instructions:
  • Preheat oven to 450°F and prepare a cookie sheet with foil, then generously coat with cooking spray.
  • Combine Bisquick™ mix, cheese, paprika, and salt in a shallow baking dish. Dip chicken strips in eggs, coat with the Bisquick™ mixture, dip in eggs and coat again with the Bisquick™ mixture. Place chicken on a cookie sheet and drizzle with butter.
  • Bake for 12 to 14 minutes, flipping halfway through, until center is no longer pink.
