Gluten-free vegan cornbread with a crispy crust and soft, dense interior made with almond or soy milk.
Ingredients:
  • 2 cups instant corn flour
  • 3 tablespoons white sugar
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 cup almond milk
  • 0.5 cup vegetable oil
  • 3 tablespoons maple syrup
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease a 9-inch cake pan.
  • Combine corn flour, sugar, baking powder, baking soda, and salt in a large bowl, blending until evenly mixed.
  • Combine almond milk, oil, and maple syrup in a small bowl. Gently incorporate into the corn flour mixture until just moistened. Spread the batter evenly into the cake pan.
  • Bake in the oven until a knife inserted in the center comes out clean, for 20-25 minutes.
