Make a delicious meatless meal with store-bought gnocchi for Meat-free Monday.
Ingredients:
  • 1 x 500g pkt potato gnocchi
  • 80g (1/2 cup) frozen peas
  • 1 zucchini, halved lengthways, cut into batons
  • 100g snow peas, trimmed
  • 200g broccoli, cut into small florets
  • 1 bunch asparagus, woody ends trimmed, halved crossways
  • 60g (1/4 cup) basil pesto
  • 300ml light thickened cream
  • Shaved parmesan, to serve
Instructions:
  • In a large saucepan of boiling salted water, cook the gnocchi for 1 minute. Add peas, zucchini, snow peas, broccoli, and asparagus. Continue cooking for 4 minutes until the gnocchi is tender and the vegetables are crisp-tender. Drain before serving.
  • Combine the pesto and cream in a pan over low heat, stirring until warmed. Mix in the gnocchi mixture and season with salt and pepper, tossing to combine.
  • Serve by dividing into individual dishes and generously topping with freshly grated Parmesan before serving.
