Delicious gnocchi with Italian sausage, spinach, and cheesy vodka sauce - quick and easy!
Ingredients:
  • 8 ounces bulk Italian sausage
  • 0.5 white onion, diced
  • 1 (24 ounce) jar vodka marinara sauce (such as Safeway® Signature Select™)
  • 4 ounces tomato juice, or as needed
  • 0.66666668653488 cup shredded mozzarella cheese
  • 0.5 cup fresh spinach
  • 17.5 ounces potato gnocchi (such as De Cecco® No. 401)
Instructions:
  • Begin by warming up a large skillet over medium-high heat. Then, brown and crumble sausage and onion in the skillet for 5 to 7 minutes. Add vodka sauce and tomato juice until you reach your preferred consistency. Finally, mix in mozzarella cheese and spinach.
  • 1. Heat a large pot of salted water until boiling. Add gnocchi and cook until they float to the surface, about 2 to 4 minutes. Drain well.
  • Plate the gnocchi and elegantly smother them with the delectable sauce before presenting them for your guests to enjoy.
