Goat's cheese, roasted capsicum and olive tartlets

Create crispy tartlets with just four basic ingredients.
Ingredients:
  • 6 sheets filo pastry
  • 75g goats cheese
  • 62.50 ml chopped marinated capsicum
  • 40g olive
Instructions:
  • Preheat the oven to 175°C. Lay half of the filo sheets on a flat surface. Lightly spray one sheet with oil and layer another sheet on top. Repeat this process with one more sheet. Cut the pastry into twelve 10cm squares, removing any extra pastry.
  • Line each cavity of a 12-hole mini muffin pan with a pastry square. Bake for 5-6 minutes or until golden brown. Remove from pan and let cool. Repeat with the rest of the filo pastry squares.
  • Fill each tartlet case generously with creamy and tangy goat's cheese, then top them with flavorful capsicum and savory olives. Serve immediately to enjoy the perfect bite of deliciousness!
