Create a flavorful summer pasta by mixing goat cheese, arugula, cherry tomatoes, olive oil, and garlic with hot penne. Delicious and easy!
Ingredients:
  • 5.5 ounces goat cheese
  • 2 cups coarsely chopped arugula, stems included
  • 1 cup quartered cherry tomatoes
  • 0.25 cup olive oil
  • 2 teaspoons minced garlic
  • 8 ounces penne pasta
Instructions:
  • Boil pasta in a generously salted large pot of water until perfectly cooked.
  • Place the creamy goat cheese into a generous serving bowl. Combine with fresh arugula, sweet cherry tomatoes, fragrant olive oil, minced garlic, and a dash of salt and pepper.
  • Drain the pasta, then coat it thoroughly with the creamy goat cheese mixture.
