Festive goat cheese and bacon pops - a simple, make-ahead, gluten-free appetizer for any party or holiday feast!
Ingredients:
  • 6 slices bacon
  • 4 ounces goat cheese
  • 4 ounces cream cheese (lower fat is fine here, if you prefer)
  • 1 tablespoon mild honey
  • Pinch dried chili flakes (optional)
  • 1/3 cup dried cherries (cranberries, blueberries, or other tart dried fruit works well, too)
  • 1/2 cup lightly packed fresh herbs (I used parsley and chives)
  • 1/2 cup unsalted pecan halves
Instructions:
  • Fry the bacon in a skillet over medium heat until crispy. Place on a paper towel to drain. Refrigerate for several days until ready to use.
  • Prepare the cheese mixture by blending goat cheese, cream cheese, honey, chili flakes (if desired), a pinch of salt, and a pinch of pepper in a food processor until smooth. Chill in a small bowl in the freezer for 10 to 20 minutes until firm but not fully frozen. This mixture can be made up to 2 days ahead and stored in the fridge.
  • Prepare the bacon topping: Once the cheese mix is chilling, clean the food processor. Add dried cherries to the food processor and pulse for one second until finely chopped. Incorporate herbs and pulse a few more times. Next, add bacon and pecans, pulsing until the mixture becomes crumbly. Be careful not to over-mix to avoid a bacony nut butter consistency. Transfer the topping to a bowl.
  • Form the cheese mixture into 12 small balls, each about a scant tablespoon in size. Wetting your hands with cool water will make the process less messy.
  • Coat the cheese balls with the bacon topping by gently pressing it onto the cheese to ensure it sticks.
  • Skewer the cheese balls and refrigerate until ready to serve. Enjoy them fresh the same day or refrigerate for a few hours before serving.
