Creamy goat cheese enhances blueberry lavender honey ice cream.
Ingredients:
  • 1 cup whole milk
  • 1 tablespoon lavender honey
  • 0.5 cup soft goat cheese
  • 2 cups heavy cream
  • 2.5 cups fresh blueberries
  • 2 tablespoons water
Instructions:
  • In a saucepan, combine milk, sugar, and 1 tablespoon lavender honey. Heat over medium-high heat until boiling, stirring until honey and sugar are dissolved, approximately 1 minute. Let it cool briefly before using.
  • Combine goat cheese in a bowl with lukewarm milk mixture, stirring until smooth. Add cream and refrigerate for 8 hours to overnight.
  • In a saucepan, gently heat blueberries, water, and 1 tablespoon of lavender honey until mixture boils slowly. Let simmer for 15 minutes until liquid reduces. Use a wooden spoon to mash berries into a chunky jam-like consistency. Chill in the refrigerator for 8 hours or overnight.
  • Transfer the goat cheese mixture into an ice cream maker and freeze per manufacturer's instructions until it begins to thicken, approximately 10 minutes. Gradually incorporate the blueberry mixture and continue freezing for another 10 minutes. Store in an airtight container and freeze until solid, around 4 hours.
  • Allow to thaw at room temperature for 20 minutes before serving.
