Bursting with juicy lamb and creamy goat cheese, flavored with fragrant basil and oregano, personalize with your favorite herbs.
Ingredients:
  • 1 teaspoon olive oil
  • 0.5 cup diced onion
  • 2 pounds ground lamb
  • 1 egg
  • 1 cup bread crumbs
  • 1 clove garlic, minced
  • 4.5 teaspoons salt
  • 1 tablespoon ground black pepper
  • 4 ounces soft goat cheese
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon chopped fresh basil leaves
  • 1 tablespoon chopped fresh oregano
Instructions:
  • In a small skillet over medium heat, sauté the onion in 1 teaspoon of olive oil until soft and translucent, for about 5 minutes.
  • Combine onion, lamb, egg, bread crumbs, garlic, salt, and pepper with care. Shape into six balls, cover, and chill until needed.
  • Combine goat cheese, extra-virgin olive oil, basil, and oregano until thoroughly mixed; refrigerate covered for 5 minutes.
  • Get your outdoor grill ready by preheating it to medium-high heat and giving the grate a light oiling to prevent sticking.
  • Individually stuff each meat portion with a generous spoonful of goat cheese mix, shaping it into a burger patty around the filling. Repeat for all lamb balls.
  • Grill patties until perfectly cooked through, about 8 minutes per side. Use an instant-read thermometer – aim for at least 130°F (54°C) for medium or 150°F (65°C) for well done.
