Crispy fried cauliflower coated in a flavorful blend of chiles, garlic, and ginger - a delicious Indo-Chinese snack or appetizer.
Ingredients:
  • oil for deep frying
  • 5 tablespoons all-purpose flour
  • 3 tablespoons cornmeal
  • 1 teaspoon ground black pepper
  • 0.75 teaspoon salt, or to taste
  • 15 cauliflower florets
  • 0.75 cup vegetable stock, divided
  • 1 tablespoon cornmeal
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 1 tablespoon chile-garlic sauce (such as Sriracha®)
  • 1 tablespoon vegetable oil
  • 0.5 cup chopped onion
  • 1 green chile pepper, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon finely chopped ginger
  • 1 green onion, chopped, or to taste
Instructions:
  • Warm up some oil in a large pot over medium heat.
  • Combine flour, cornmeal, water, black pepper, and salt in a bowl to create a thick batter. Add cauliflower florets and mix until evenly coated.
  • Fry cauliflower florets in batches until crisp and golden, approximately 3 minutes each. Drain on paper towels.
  • Combine 1/4 cup vegetable stock with cornmeal in a bowl, then mix in soy sauce, ketchup, chile-garlic sauce, and salt.
  • In a hot wok or frying pan, stir-fry onions, chile pepper, garlic, and ginger in oil briefly. Add cornmeal mixture and cook for 1 to 2 minutes. Stir in the rest of the vegetable stock and simmer until the sauce thickens, about 10 minutes. Remove from heat.
  • Pour the sauce generously over the golden fried cauliflower and gently mix. Top it off with a sprinkle of fresh green onions before presenting it to your eager guests.
