Gochujang Barbeque Sauce

Korean-inspired BBQ sauce with gochujang, soy sauce, heirloom tomatoes, and molasses adds a tangy kick to American grilling.
Ingredients:
  • 0.5 white onion, chopped
  • 3 pounds heirloom tomatoes, chopped
  • 0.5 cup apple cider vinegar
  • 0.25 cup firmly packed light brown sugar
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons gochujang (Korean hot pepper paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon molasses
  • 4 cloves garlic, crushed
  • 1.5 teaspoons lime juice
Instructions:
  • In a large saucepan over medium heat, sauté the onion until translucent for about 5 minutes. Stir in tomatoes, vinegar, brown sugar, Worcestershire sauce, gochujang, soy sauce, molasses, garlic, and lime juice. Simmer the mixture before removing from heat to cool for at least 15 minutes before using.
  • Pour the sauce into a blender and blend until smooth.
  • Pass the sauce through a fine sieve and transfer it into sterilized Mason jars.
