Delicious udon noodles with kale, green onions, and a flavorful sweet and spicy gochujang sauce.
Ingredients:
  • 1 (8-oz.) package udon noodles
  • ¼ cup gochujang
  • ½ cup water, divided
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh lime juice (juice from 1/2small lime)
  • 1 (10-oz.) bunch dinosaur (lacinato) kale,ribs removed and roughly chopped
  • ½ cup thinly sliced scallions (about 4scallions), divided
  • 1 tablespoon garlic, minced (from 2 mediumcloves)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • ½ cup matchstick-cut cucumber (from 1 smallcucumber)
  • toasted sesame seeds
  • toasted sesame oil
  • ½ small lime, cut into 4 wedges, for serving
Instructions:
  • Prepare all ingredients.
  • - Boil a large pot of lightly salted water. - Cook udon noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, for 10 to 12 minutes. - Drain the noodles and rinse them under cool water; then set aside.
  • Combine gochujang, 1/4 cup water, soy sauce, maple syrup, and lime juice in a bowl, whisk until well combined to create a flavorful sauce. Set aside.
  • In a wok or large skillet, heat oil until shimmering. Stir in kale, 1/4 cup scallions, garlic, salt, and pepper. Cook while stirring constantly with tongs until greens are just wilted, and garlic and onions are glossy. This should take about 2 minutes. Pour in the sauce and cook until slightly thickened and darkened, for an additional 1 to 2 minutes.
  • Combine the cooked noodles with the sauce and cook for 2 to 3 minutes until the sauce bubbles around the edges, adding more water gradually if needed to coat the noodles evenly.
  • Garnish with cucumber, the rest of the scallions, and sesame seeds. Finish with a drizzle of sesame oil and serve warm alongside lime wedges.
