Spicy Korean chicken and rice noodle bake: marinated chicken thighs on a bed of rice noodles, baked to perfection with gochujang flavor.
Ingredients:
  • 1 rounded tablespoon finely minced ginger
  • 1/4 cup rice vinegar
  • 2 tablespoon light soy sauce
  • 1 teaspoon kosher salt
  • 1 tablespoon brown sugar
  • 1/4 cup ketchup
  • 1 teaspoon sesame oil
  • 2 tablespoons gochujang (Korean chili paste), or to taste
Instructions:
  • Combine fresh ginger and minced garlic in a mixing bowl, then drizzle 1/4 cup rice vinegar over the mixture. Allow it to rest briefly for 30 seconds before whisking in soy sauce, salt, brown sugar, ketchup, 1 teaspoon sesame oil, and gochujang.
  • Coat chicken thighs evenly in marinade, ensuring they are well covered. Refrigerate to marinate for at least 1 hour and up to 8 hours.
  • Preheat the oven to 425 degrees F (220 degrees C), then lightly grease a 9x13-inch casserole dish with 1 teaspoon of fragrant sesame oil.
  • Spread the rice vermicelli evenly on the dish, gently separating the noodles to cover the bottom completely. Cut off sections of noodle if necessary.
  • Sprinkle mushrooms, peppers, and half of the green onions evenly. Arrange marinated chicken thighs on top, skin side up, and drizzle any extra marinade over the chicken.
  • Use chicken broth to rinse the marinade bowl, then pour it into the dish without washing off the marinade from the chicken. Sprinkle a few tablespoons of green onions on top.
  • Roast in the oven until chicken is cooked through and juicy, about 30-35 minutes. Check with an instant-read thermometer for doneness at 165°F (74°C).
  • Transfer the chicken to a plate. Combine noodles and veggies in the pan. Drizzle with 1/4 cup rice vinegar and 2 tablespoons sesame oil; mix well. Adjust seasoning to taste.
  • Plate the chicken on top of the noodles, then generously garnish with sesame seeds and additional green onions for that extra burst of flavor and freshness.
