Whip up homemade focaccia effortlessly with a foolproof recipe.
Ingredients:
  • 2 1/2 to 3 cups Gold Medal™ all-purpose flour or Better for Bread® bread flour
  • 2 tablespoons chopped fresh or 1 tablespoon dried rosemary leaves, crushed
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 package regular or fast-acting dry yeast (2 1/4 teaspoons)
  • 1 cup water
  • 3 tablespoons olive or vegetable oil
  • Cooking spray to grease bowl and cookie sheets
  • 2 tablespoons olive or vegetable oil
  • 1/4 cup grated or finely shredded Parmesan cheese
Instructions:
  • Combine 1 cup of flour, rosemary, sugar, salt, and yeast in a large bowl. Stir well with a wooden spoon. Warm water in a 1-quart saucepan until it reaches 120°F to 130°F. Add the warm water and 3 tablespoons of oil to the flour mixture. Beat with an electric mixer for 3 minutes until smooth. Gradually add the remaining flour, 1/4 cup at a time, until the dough is soft and slightly sticky, and easy to handle.
  • Lightly dust a countertop or large cutting board with flour. Place the dough on the floured surface and knead by folding it towards you, then pushing it away with a short rocking motion using the heels of your hands. Rotate the dough a quarter turn and repeat this process for 5 to 8 minutes, adding more flour as needed until the dough is smooth and springy. Grease a large bowl with cooking spray and place the dough in it, turning to coat all sides. Loosely cover the bowl with plastic wrap and let the dough rise in a warm place for 30 minutes or until it has almost doubled in size. The dough is ready when an indentation remains after pressing your fingertips about 1/2 inch into it.
  • 1. Grease 2 cookie sheets or 12-inch pizza pans with cooking spray. 2. Gently deflate the dough by pressing your fist into it. 3. Divide the dough in half. 4. Shape each half into a flattened 10-inch round on a cookie sheet. 5. Lightly grease 2 sheets of plastic wrap with cooking spray and cover the dough loosely with the greased side down. 6. Allow the dough to rise in a warm place for about 30 minutes or until doubled in size. 7. Remove the plastic wrap before proceeding.
  • Preheat your oven to 400°F. Create 1/2-inch-deep indentations about 2 inches apart in the dough using your fingers. Brush gently with 2 tablespoons of oil and sprinkle with cheese. Bake for 15 to 20 minutes until golden brown. Enjoy warm or cooled.
