Golden haloumi with fresh pineapple salsa

Delicious summer appetizer: crispy haloumi with spicy salsa.
Ingredients:
  • 150g (1 cup) finely chopped fresh pineapple
  • 1 long fresh red chilli, finely chopped
  • 20.00 ml chopped fresh mint leaves
  • 21.00 gm lime juice
  • 18.20 gm extra virgin olive oil
  • Pinch of caster sugar
  • 250g haloumi, cut into 1cm thick slices
Instructions:
  • In a bowl, mix together the pineapple, chili, fresh mint, lime juice, oil, and sugar. Season to taste.
  • 1. Preheat a large non-stick frying pan over medium-high heat. Cook the haloumi until golden on both sides, about 3-4 minutes. Place on a platter and top with the pineapple mixture.
