Ingredients:
  • 250g red fish fillets
  • 500g green prawns, peeled and deveined
  • 70.00 gm red curry paste, or to taste
  • 2 tsp grated fresh ginger
  • 1 lime, juiced
  • 300mls thickened cream
  • 40.00 ml roughly chopped fresh coriander leaves
  • Lime wedges, to serve
  • 12-18 cooked pappadums, to serve
Instructions:
  • Preheat your oven to 180°C, then blend the fish fillets and prawns in a food processor until smooth.
  • Combine the red curry paste, ginger, lime juice, egg, and cream in a food processor and blend until smooth. Mix in the coriander.
  • Transfer the mixture into a lightly greased 500ml (2 cup) ovenproof dish, then place the dish in a roasting pan. Add enough warm water to the roasting pan, reaching a quarter of the way up the sides of the dish.
  • Bake in a preheated oven for 20-25 minutes until the pate is golden and slightly firm. Serve warm with lime wedges and pappadums.
