Golden syrup window biscuits

Create stunning stained glass effect biscuits for a festive gift idea loved by kids and perfect for spreading holiday cheer.
Ingredients:
  • 400g (2 pkts) clear boiled fruit drop lollies (Beatties brand)
  • 180g butter, at room temperature
  • 100g (1/2 cup, firmly packed) brown sugar
  • 80ml (1/3 cup) golden syrup
  • 300g (2 cups) plain flour
  • 40g (1/4 cup) self-raising flour
  • 41.20 gm milk
Instructions:
  • Prepare baking trays with non-stick baking paper. Sort lollies by color and place each in individual sealable plastic bags. Wrap each bag in a tea towel and crush the lollies using a hammer or meat mallet. Transfer crushed lollies to separate airtight containers.
  • In a medium bowl, cream the butter and sugar with an electric beater until pale and creamy. Mix in the golden syrup until well combined.
  • Transfer the butter mixture to a large bowl. Add the plain flour, self-raising flour, and milk. Mix together using a round-bladed knife in a cutting motion until the mixture comes together. Turn the dough onto a well-floured surface and knead lightly until smooth. Wrap the dough in plastic wrap and refrigerate for 30 minutes to rest.
  • Preheat oven to 180C and roll dough to a 5mm thickness using a lightly floured rolling pin. Cut out biscuits using a 6.5cm square cutter or a 9cm point-to-point star cutter, or any shape your child prefers.
  • Cut out the centers of each biscuit using a 4cm square cutter or a 4cm star cutter. Press a round 5mm piping nozzle into the top corner of each biscuit to create a small hole. Arrange on the lined trays.
  • After baking the biscuits for 10 minutes, place the lollies in the center hole using one color per biscuit. Continue baking for another 5 minutes until the biscuits are golden and lollies are melted.
  • Take out of the oven and allow to cool briefly before moving to a wire rack to cool completely. Repeat the process with the rest of the dough and candies.
  • Cut the ribbon into 25cm lengths. Thread each through the hole at the top of a biscuit and tie a knot at the end. Hang them on your Christmas tree.
