Fluffy cinnamon pancakes with a hearty blend of flours.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 cup whole wheat flour
  • 0.33333334326744 cup white sugar
  • 2 teaspoons baking powder
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground cinnamon
  • 2 cups milk
  • 1 tablespoon vanilla extract
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil, or as needed
Instructions:
  • In a large bowl, combine all-purpose flour, whole wheat flour, white sugar, baking powder, salt, and cinnamon. Create a well in the center of the dry ingredients.
  • Combine the milk and vanilla extract in the well, then incorporate the beaten eggs. Stir the wet and dry ingredients together until smooth.
  • Prepare the skillet by greasing it with oil and heating it over medium heat.
  • Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook until golden brown with small pinholes forming on top, about 2 minutes. Flip and cook until middle is set and pancake is golden brown, 2 to 3 minutes. Repeat with remaining batter, greasing skillet as needed.
