Gouda and Bacon Stuffed Mushrooms: a delicious party appetizer with white button mushrooms, perfect for any gathering. Prep in advance and bake to perfection for irresistible bites that will keep guests coming back for more!
Ingredients:
  • 1 pound white button mushrooms, thoroughly cleaned
  • 8 strips bacon (not thick cut)
  • 1/2 yellow onion, diced
  • 8 ounces gouda cheese, grated
  • 1/2 cup bread crumbs
  • 1/2 teaspoon dried thyme
Instructions:
  • Preheat the oven to 400˚F.
  • Remove mushroom stems using a small paring knife, making a hollow space in each mushroom while leaving enough room around the edges to hold the filling. Finely dice the removed stems and core parts.
  • Fry the bacon in a skillet over medium heat until crispy, about 6 to 7 minutes. Remove the bacon, keep the grease in the pan, and finely chop the cooked bacon.
  • In a skillet with reserved bacon grease, sauté chopped mushroom cores, diced onions, and thyme over medium heat until onions are soft, about 5 minutes. Take off heat and mix in breadcrumbs and chopped bacon. Cool before using.
  • Stir in the grated gouda cheese once the mixture has cooled slightly.
  • Arrange the cored mushrooms in a lightly oiled baking dish. Generously fill each mushroom cap with 2 heaping tablespoons of the filling, mounding it up and pressing it down firmly. Don't worry if the mushrooms are brimming over - use up all the filling!
  • Preheat your oven to 400 ̊F and bake the stuffed mushrooms for 20 minutes. Allow them to cool slightly before serving. For make-ahead convenience, prepare the stuffed mushrooms ahead of time and reheat in a 350 ̊F oven until warmed through. Enjoy within 3 days when stored in the fridge.
