Make gourmet fruit mince ahead for better flavor in 1 week.
Ingredients:
  • 85g mixed peel
  • 150g dried apricot
  • 80g currants
  • 150g pkt Sweetened Dried Cranberries
  • 190g dried fig
  • 375g pkt sultanas
  • 375g pkt raisins, chopped
  • 2 Granny Smith apples, peeled, coarsely grated
  • 330g brown sugar
  • 5.00 gm mixed spice
  • 375ml frangelico
Instructions:
  • Mix together the mixed peel, apricot, currants, cranberries, fig, sultanas, raisin, apple, sugar, mixed spice, and liqueur or orange juice in a large bowl. Cover and store in a cool, dark place for at least 1 week, stirring every 2 days to enhance the flavors.
  • Transfer the mixture into clean, sterilized jars following the instructions in the jam recipe on page 98, then seal the jars. Store in a cool, dark place for a maximum of 6 months.
